I know the feeling all too well. As someone who’s lived with IBS for years, I understand the hesitation, the restriction, and the fear that can creep into something as simple as enjoying dessert.
But what if dessert didn’t have to be off-limits?
This Strawberry Rhubarb Crumble is my answer to that question — a sweet, tangy, gut-friendly recipe you can actually enjoy without the post-meal regret.
Why I Created This Recipe
I’m Marica Gaspic Piskovic — pharmacist, gut health coach, and someone who lives with IBS every day. Over the years, I’ve learned how to adapt my approach to food so I don’t have to feel deprived. I’m also gluten and dairy intolerant, so finding satisfying treats that won’t upset my gut has become a bit of an art form.
This crumble is one of my favourite creations. It’s made with:
Gluten-free oats
Tapioca (to gently absorb juices)
Rhubarb and strawberries — low FODMAP in the right amounts
Coconut oil and coconut ice cream (optional) for a creamy, dairy-free finish
It’s simple. It’s nourishing. And it’s designed to support digestion, not sabotage it.
